This ready-mix formulation enables easy preparation of murukku and similar crisp snack foods from blended cereal and pulse flours. This ready-to-fry crisp snack is made from cooked dough comprising cereal flours like ragi, rice, maize, sorghum, wheat, or sago, individually or blended with pulse flours, salt, and spices. Once deep-fried, it becomes a crispy wafer-like meal adjunct. With a shelf life of six months, it supports small-scale, low-investment processing and local entrepreneurship.
