CSIR-CFTRI has developed a vegetable dehydration technology for green chillies and other perishables, enabling safe and economical preservation during abundance for off-season use. Dehydrated fruits and vegetables remain stable in suitable packaging and will find good place in Indian homes. Technical support and consultancy assistance are available as required.
