The prawn pickle is an emulsion-based formulation containing fried prawns blended with acid, salt, spices, condiments, and sugar, preserved in covering oil. Developed by CSIR–CFTRI, it has a proven shelf life of over one year without added preservatives and has received high consumer acceptance for taste and quality.
