CSIR-NIIST has developed a microbial enzymatic process to produce high-quality white pepper from black or green pepper. Using controlled anaerobic digestion in a specially designed reactor, this sustainable technology enables efficient bulk production while enhancing product quality and reducing environmental impact. Technical consultancy is available for deployment and commercialization.
