A process for producing low-sodium, nutrient-rich salt (Saloni) from the salt-tolerant plant Salicornia brachiata provides a healthy alternative for vegetarians and individuals requiring reduced sodium intake. Cultivation on saline lands yields ~41 t fresh biomass, 11 t dry biomass, and 3.8 t ash/ha, supporting coastal farmer livelihoods while promoting sustainable resource use. Technical consultancy for deployment is available.
